Red Velvet Cake

Just in time for Valentine’s Day, this follower request has a delicious cream cheese icing and velvety cake.

INGREDIENTS

For the cake:

  • 3 1/2 cups flour
  • 2 cups sugar
  • 1 cup butter
  • 1 1/2 cups buttermilk
  • 3 eggs
  • 4 Tbs hot water
  • 1 1/2 tsp baking soda
  • 4 Tbs cocoa powder
  • 1/2 tsp salt
  • 3 Tbs red food coloring
  • 1 1/2 Tbs white vinegar

For the cream cheese frosting

  • 16 ounces cream cheese
  • 1 cup butter
  • 2 Tbs vanilla
  • 2 cups powdered sugar
  • 8 Tbs milk

DIRECTIONS

With an electric mixer, beat softened butter and sugar until creamy.

Add buttermilk, eggs, and hot water and mix until combined.

In a separate bowl, combine flour, baking soda, salt, and cocoa powder with a whisk.

Add wet ingredients to dry ingredients and mix with a rubber spatula.

Fold in vinegar and red food coloring.

Add to 2 greased cake pans and bake at 400 degrees for 20-25 minutes or until toothpick comes out clean.

While the cake is baking make the cream cheese icing. Place all ingredients in a blender and mix until smooth.

Allow cake to cool completely before assembly.
