Aside from salt baking, this is one of my favorite ways to cook fish. En papillote is a method of baking that retains more flavor and moisture than other cooking methods.

INGREDIENTS
- 2 lbs steelhead trout
- 1/2 red onion, sliced
- 2 mangoes, chopped
- 4 Tbs olive oil
- 4 splashes of white wine
- 2 red chilis, sliced
- 3 Tbs fennel seeds
- 2 tsp cayenne pepper
- 1 tsp salt
- 1 tsp pepper
- parchment paper
DIRECTIONS
For seasoning mix, combine fennel seeds, cayenne, salt and pepper in a bowl and mix well.

Lay out 2 feet of parchment paper and place fish filet on top. Top fish with onions and mangoes, then sprinkle with seasoning. Drizzle fish with olive oil.

Fold parchment paper around fish to form a packet.

Before making the final fold, add in white wine.

Bake in a 375 degree oven for 30 minutes.
